How to Make Simple Plain Briyani(Kuska) ??



Plain Briyani

Serves          : 4
Prep time      : 10 mins
Cooking time : 15 mins

Ingredients

o    2 cups Rice, washed and soaked
o    2 Cloves, Cardamom, Cinnamon, Bay leaf each
o    2 tbsp Oil
o    1 tbsp Ghee
o    1 cup Mint and Coriander Leaves Chopped
o    1 medium sized Onion finely chopped
o    1 medium sized Tomato finely chopped
o    2 tbsp Ginger Garlic Paste
o    3 Green Chilies
o    1 tsp Turmeric Powder
o    2 tbsp Chili Powder
o    1 tbsp Garam Masala
o    Salt to taste
o    Cashews(Optional)


Method

o    Heat Oil and Ghee in the cooker pan  and add All Spices into it. Let the spices infuse in the oil mixture for a while.

o    Add the onion and saute till they turn golden color. Sprinkle pinch of salt and continue sauteing.

o    When onion starts browning add the Ginger Garlic paste and fry till the raw smell is gone.

o    Add the chopped tomatoes and allow the onion and tomato cook for a while. Add some water if needed.

o    Now add the Green Chilies, Turmeric Powder and Chili Powder with little water.

o    Once all mixture is combined, add 4 cups of water and let it boil.

o    Add the washed and soaked rice and mix well.

o    Add required salt after little taste.

o    Cover the pan and cook in low flame for 2 whistles.

o    Remove the lid after the pressure is released.

o    Mix gently and Serve hot with chilled Onion Raitha πŸ˜ƒπŸ˜ƒπŸ˜ƒπŸ˜ƒπŸ˜ƒπŸ˜ƒπŸ˜ƒπŸ˜ƒ

How to make Quick Pepper Chicken ???


Chicken is one of the most consumed proteins in all over the world. There are so many varieties of chicken Recipes that if we want to try each chicken dish a day our life won’t be enough. There are many people who are very fond of Chicken. They eat chicken in any form (Including me!!).


Not only Indian recipes, people want to try to explore chicken recipes from other countries also. I have eaten many chicken dishes so far. Deep fried, Boiled, Roasted and Tandoori etc. But this recipe is one of my favorites and frequently cooking recipe. 

Whenever I don’t want to spend too much time in cooking chicken, I pick this Pepper Chicken Recipe. Very very easy to cook with simple ingredients. This mouthwatering dish will be very tasty with hot boiled rice or chappathi. Hope you guys enjoy cooking and eating it J J J J

Pepper Chicken

Serves          : 2
Prep time      : 10 mins
Cooking time : 15 mins

Ingredients

o    250 g Chicken cut in small pieces
o    10-15 Curry leaves
o    2 tbsp Oil
o    1 tsp Mustard seeds
o    1 medium sized Onion finely chopped
o    1 medium sized Tomato finely chopped
o    Coriander leaves for garnish
o    Salt to taste

Spice

o    1 tsp Cumin Seeds
o    1 tsp Fennel Seeds
o    2 Dry red chilies
o    1 inch Ginger chopped
o    3 cloves Garlic chopped
o    2 tsp Coriander seeds
o    2 tbsp Whole black pepper

Method

o    Take a heavy bottom pan and dry roast the spices mentioned above till the color changes and its fragrance released.

o    Once done, let it cool completely. Mean while clean the chicken and keep it aside.

o    Grind the cooled spice mix into powder consistency in blender.

o    Heat Oil in pan and add mustard seeds. Let it pop completely before adding the curry leaves.

o    Add the onion and sautΓ© till they turn golden color. Sprinkle pinch of salt and continue sautΓ©ing.

o    When onion starts browning add the chopped tomatoes.

o    Let the onion and tomato cook for a while. Add some water if needed.

o    Now add the grounded spices with little water.

o    Let the water content to reduce to very minimal and add the chicken pieces.

o    Mix well so that all chicken pieces evenly coated with masala.

o    Cover the pan and cook in low flame for 15 mins or till the chicken is done.

o    The chicken should have released all its juices out.

o    So, wait until you get the right consistency for your dish. If you are looking for gravy you can just take it off the heat and garnish with Coriander leaves.

o    If its dry you are looking for let the water to evaporate little more and garnish once done.

o    Pepper chicken is ready and Happy eating 😊😊😊😊😊😊😊😊😊😊

How to Make Gulab Jamun Using Bread???



            Can you name any person who doesn’t like sweets? If indeed there is someone, which is very very rare, they ought to be removed from Human Being list. Just Joking. Everyone loves sweets. In India there are so many varieties of sweets, that it will take lifelong to taste each one of them.

                They differ from State to State and City to City. Simply you can’t resist eating those sweets. I am a sweet lover. I will eat all types of sweets. No exceptions. If you ask me what is your favorite sweet, I’ll say, even in my sleep, that it’s Gulab Jamun. I can even say its King of Sweets.

                 The round and soft balls, with or without jeera (sugar syrup) I simply dig it till everything disappears in my mouth. I hope everyone agrees to that. In this recipe I have tried using bread as Core ingredients. It turns our good attempt and I didn’t feel so much difference in taste.
                 
                    It is easy to prepare with very much items available in our kitchen. I guarantee you won’t regret your decision of making the sweet and soft Bread Gulab Jamun. Happy Eating !!!!!!

Ingredients:


5 No.           bread slices
½ cup          Sugar
2 No.           Cardamom pods/Elachi
½ cup          Milk
10 No.         Cashews
Pinch of       Salt
Oil               as Required


Method:


  • Cut all the bread crust, and shred the bread into finer pieces [Image 1]. Your hands should do fine. No need of blenders it will make it too finer. Roast the Cashews in ghee/oil of your choice and roughly crush it.
  • Take the shredded bread and add 1 table spoon of milk with salt and knead it. Add one spoon of milk at a time so that your dough won’t become soggy.
  • After adding second spoonful of milk add the crushed cashews and continue the kneading. We are looking for chapatti dough like consistency.[Image 2]
  • Now, make smaller balls of same size from the bread dough. Heat oil in pan and once it’s hot, deep fry the balls until the golden brown color appears. [Image 3]



  • Meanwhile, take the sugar and melt in a pan with ½ cup of water with cardamom pods. And let it simmer to reach the syrup consistency. Then turn off the heat.
  • Once the frying balls reaches the color of desired, take it off the pan drain the excess oil with tissue paper on a plate, and put the balls in the sugar syrup. Let it soak for at least an hour before serve.
  • You will find roasted cashews in each bite will take you to the next level of Joy. Give your friends and families a surprise treat with this Bread Gulab Jamun.

How to make Choco Chips Cookie?


     
  Lazy morning. still eyes are half asleep, legs are automatically moving towards kitchen and making some coffee to kick-start the day. Though coffee alone makes more than sufficient to make us feel greater, many people will not have coffee ☕, if there is no biscuits/cookies πŸͺ to go with it. Including myself πŸ˜›.

       Imagine the day, you with coffee and the world's best home made chocolate chip cookies. Each bite with cookie dipped in coffee, takes us to the pleasure of heavens and crafts our mind that there won't be a better a way to start a day like this.

           I was eating the store bought chocolate chip cookies for long time, before starting to bake my own. And I am so addicted to this home baked cookies taste. The next thing when you bake cookies at home, you can customize as per your taste. Less sugar, less butter, added nuts, egg-less etc. 

               There are many recipes available in books as well as in net. But I have created my recipe in the same fashion of how I do the cakes, so that it will be easy to remember as well to bake. I have mixed brown sugar with my white sugar to give best of both flavors. If you don't get brown sugar, replace the same amount with white sugar there wont be change in texture. 

                  This is just the basic recipe for any cookie, replace the chocolate chips with nuts, sugar balls, white chocolate etc. Don't worry if you burn your cookies. I bet that will also taste good when done.😊😊😊

Ingredients:

        1 cup           Chocolate chips    
½ cup          Brown sugar
¼ cup          Normal Sugar       
½ cup          Butter at Room temperature         
1 large         Egg             
1 cup           All-purpose flour, sifted at least 2 times
1 tsp            Vanilla extract
1/2 tsp         Baking soda
             Pinch of          Salt




Method:

  • Take the cookie tray and grease it with butter or line with butter paper and keep it aside.
  • When all the ingredients are measured and ready, preheat the oven with 160oC and we can start with cookie batter.
  • Cream butter with brown sugar and normal sugar.
  • Lightly mix the egg, vanilla extract and salt in a bowl, and add this mixture little by little into your butter and sugar cream and combine together.
  • Once the eggs are combined, add the chocolate chips and 1/4th of the all-purpose flour with baking soda (while sifting the flour itself, add baking soda, so that the baking soda will evenly disperse in batter than accumulating in one part)
  • Fold the mixture with wooden spoon until no flour is left unmixed. Add the next small quantity of flour and continue the folding.
  • The consistency we are expecting is jam like. Neither too runny nor too doughy. Add little flour/milk to make the right consistency.
  • We need equal size batter to be dropped in the tray to get even cooking time. I used two spoons to place even quantity cookie batter in greased tray.
  • Give ample space between each drop, so that upon cooking it will expand without bumping on each other. You can use piping bag also.
  • Place the tray in oven and bake for 12-15 mins in 160oC. I used one table spoon size of batter. So adjust the cooking time depends upon the cookie size. Make sure you don’t burn them.
  • You can check for the nice brown color on top when it’s done. Turn off the oven and leave the cookies in tray for 5 mins before removing the tray onto the wire rack to cool.
  • Use a knife to remove the cookies from tray after they have cooled completely. Store it in air tight container and it can last up to 1 week without refrigeration.
  • Start the day with this cookie and a coffee, make the day absolutely wonderful for you 😊😊😊😊😊😊will you ??

How to make simple Banana Bread ????


I was in this cake shop one day and wandering around to see something interesting to look and as well as to eat. Then I saw this black and white dots center with perfectly browned outer crust cake slice and pretty sure I wanna try it.  Initially I thought it will be a different version of Plum cake, which almost look alike except the center part, but I was completely taken back once I took a bite. 

It was BANANAAAAA.. !! then asked the shop owner and he said it was Banana Bread. that softness, and sweetness of banana and the texture of bread was making some magic inside my mouth. couldnt stop myself with a slice. 

Once I am back to home, I searched for this recipe, and to my wonder, it is the very simple recipe i have come across. It reminded me something, "The most extrodinary things in the world, are always Simple" I tried this recipe couple of times before and I made minute change from actual recipe. 

I have used wheat flour with my regular flour, I find it gives a good texture compared to only regular floor. But you can use your regular flour if you dont want lit dense texture. 

Also, I have used 2 disposable, 4 x 6 inchs aluminum tray instead of regular loaf tin. I dived my batter into two parts and baked it. saves my time comparitively. I can just wrap with my cling flim and off to guests. 


INGREDIENTS


         Ripe Bananas, Peeled            :  2-3  
          Egg                                          :  2
          Vanilla Extract                         :  1 tsp
          Melted Butter                           :  1/3 cup
          Baking Soda                            :  1 tsp
          Salt                                          :  1 pinch
          Sugar, Powdered                    :  1/2 cup
          All Purpose Flour/Maida         :  1 cup 
          Wheat flour                              :  1/2 cup
   

METHOD

  • Preheat the oven to 150°C, and butter a 4x8-inch loaf pan in my case disposable aluminum trays.
  • lightly beat the eggs with vanilla extract and salt. Beat just to incorporate the ingredients.
  • Add the baking soda to you flour and sift it at-least one time. More than one time is your choice. sifting makes the flour remove lumps as well as traps air in it which helps in soft sponge.
  • In a mixing bowl, mash the ripe bananas(completely ripe so that it will give maximum sweetness) with a fork until completely smooth. Or you can give a spin in mixer grinder which ever is comfortable for you. 
  • Stir the melted butter into the mashed bananas.
  • Stir in the sugar, beaten egg and vanilla extract mix. Fold in the flour little at a time so that no lumps formed. Don't over fold the flour as it results in hard sponge.
  • Pour the batter into your prepared loaf pan. Bake for 30-40 minutes depends upon your oven or until a toothpick inserted into the center comes out clean. If you are using tray size less than mentioned here, reduce the time accordingly. 
  • Once testing done and you are happy with the result, just slightly open the oven door and keep it like that for 5-10 mins. use a wooden spoon for support the door. once the super hot air escaped, remove the pan from oven and cool it on wire rack.
  • Don't try to remove the sponge when its hot. it always end up in sticking and breaking inside the pan. 
  • Once completely cooled, slide a knife around the edge to loosen and invert the Banana bread carefully on to a plate.
  • Cut with very sharp knife for clean cut slices.
  • Great and simple food for quick and any special occasions. Everyone will love it. :)

How to cook Spicy Peanut masala Dumplings


Dumplings are very easy and simple to cook if you have all the ingredients available at home. There are so many varieties of dumplings are found all over the world. This is just a basic recipe you can try by replacing the filling with your own choice. Happy cooking :-) :-) :-) 

Ingredients:
For Dough:

Rice Flour            :               1 cup
Salt                     :               ½ tsp
Oil                       :               1 tsp
Water                  :               as required
Tumeric               :               Little pinch(For Color)

For Peanut Masala:

Peanut                 :               ½ cup (boiled)
Onion                   :               1 small size (chopped)
Tomato                :               1 small size (chopped)
Garlic                   :               2 no’s (chopped)
Chilli Powder         :               2 tsp
Turmeric Powder   :               ¼ tsp
Mustard seeds       :               ¼ tsp
Oil                        :               1 tbsp
Salt                      :               as required 

Method:
  •       Soak the Peanut for an hour and cook it in boiling water till its soft or pressure cook the peanuts and keep it aside.
  •      In a pan add some oil to heat. Then add mustard and allow it to pop.  Then add the garlic, sautΓ© for few seconds and throw chopped onions in the pan. Let it cook for a while.
  •     Once the onion become transparent add chopped tomatoes, chilli powder, turmeric, salt and add little water so that all comes together.
  •        Let the tomato to cook for 5 mins. Drain the peanuts and add it to the pan and mix well.
  •     Cook until all the masala is covered in each peanut. Make the peanut masala dry. If any water in the mix let it evaporates. Once done turn off the heat and let the masala to cool.
  •     Take a bowl, add rice flour, little salt, oil and mix thoroughly for 2 mins. Add water little bit at a time and mix the flour. The consistency should be less than Chapatti dough. Neither Hard nor Runny.
  •      Apply some oil in hands while kneading the dough. Meanwhile put the steamer on stove let it steam.
  •     Now take a thick clean plastic paper and apply some oil on it. Make the dough into small balls. Place the dough ball on plastic paper and spread using hand or roller bin. Now place the peanut masala mix in the middle and close the dough from one side covering the masala.
  •     The both edges should meet, now press gently on the edges so that it won’t open up while cooking. My technique is to fold the edge and then press with fork.
  •     Place the dumplings carefully into steamer and cook it for 4-5 mins. Check if the dumplings are cooked. Carefully place them on a plate and let it cool for couple of mins.
  •     The Spicy Peanut masala Dumplings are ready to dig in. This can be taken as evening snack or a good starter for 3 course meals :-) :-) :-)
